PUMPKIN PROTEIN BITES

I’ve been doing so good lately staying on track with my diet and exercise routine. It’s very important to me that I stay active and eat right…not just for physical reasons, but for emotional more than anything. Sugar (processed sugars in candy and ice cream etc) started to have a major effect on me after I had my first baby. Where I literally would fall into a state of depressions if I didn’t keep it 90% out of my diet completely!
But what do you do when that time of the month rolls around and it’s all you can do to know chew through the wrapper of a chocolate bar fast enough!? Well first…you don’t cave! I mean you could… not like the world would end or anything, but when it comes to these things, I’d much rather just find a replacement. Hence why I came up with these Pumpkin Protein Bites. Very similar to my Protein Truffels. The pumpkin seemed perfect in light of the season. Plus pumpkin chocolate chip cookies are one of my favs.
I’ll tell ya, these have SAVED MY LIFE many a night when I have the sweet tooth munchies. Plus because of all the protein they curb your appetite. Just pop a couple of these and I’m not even hungry anymore. And might I add GUILT FREE!!!
SHOP THE LOOK
RECIPE (SOOOO EASY)
- 2 cups rolled or quick outs (i used a mixture of both)
- 1/4 cup raw honey
- 1 scoop vanilla protein powder
- 1/2 cup pumpkin puree
- 1/2 cup almond or peanut butter
- 1 tsp vanilla
- 1 tsp cinnamon
- 1/2 cup dark chocolate chips
- pinch of salt (optional)
combine all ingredients (excepts the choc chips) and mix together with a wooden spoon until well blended. Should be able to form into a ball but not stick to your hands too much.
Last add the chocolate chips, stir until chocolate chips are combined with dough. Roll dough into preferred size balls of dough. Chill in the fridge or enjoy right away!
So the girls finally went down for naps…with a lot of negotiating I didn’t think capable for a 3 and (almost) 1 year old. I cleaned the mountain of dishes and wiped down the counters (for the first time in 2 days! eeeeek). Then I decided, hey why not take some pictures of these yummy bites before I eat them all. Lol. So I set up the camera on the counter and hopped onto the window sill….because why not? Best lighting in the room. After not too long Kylie comes sneaking down the stairs using the ‘potty’ as her excuse. Whatever, so I let her go, then she came back and asked to take pictures with me. Yeah I knew that was flat out avoiding nap time…I’m always having to bribe her to take photos haha. But I wasn’t going to say no to some cute shots with my mini. So I snapped a few with her, then sent her back to bed. All in all not so chaotic like I’m used to. SUCCESS!
