THE SALAD DIET | FAJITA BOWL

fajita bowl It sorta came out of nowhere.  But I got into a salad kick and after 2 days of salads for every meal, I was like hmmm, I wonder how long I can keep this up.  I mean I’ve always been a fruit and veggies girl for 90% of my diet, but I still enjoy my little indulgences…however, after only salads I was feeling pretty good.  Besides, I gotta get ready for summer (WHO ELSE?)

If you’re like the rest of human kind, salads can get pretty boring….that only if you don’t know how to dress em up!  There is SOOO much you can do with them.  Just get creative and crazy.  You can be a chef and it’s not even difficult.  Just as simple as buying the items and sprinkling them in a bowl.  Voila, that’s it!  Please you can’t tell me that eating a healthy hearty salad is more difficult than cooking hamburgers.

For this lovely Monday morning I’m going to share the one that’s been on repeat.
K so remember I mentioned I have my indulgences that aren’t salads?  Well we’ve been on a beef fajita kick in our house.  So take the leftovers meats and you can throw together a satisfying FAJITA BOWL!

 

FAJITA MEAT (BEEF IS MY FAV)
SLICED AVOCADO
CHOPPED TOMATO
CILANTRO
ROMAIN LETTUCE
KALE (BECAUSE YOU GOTTA HAVE ‘REAL’ GREENS)
BLACK BEANS
CORN
FETA CHEESE
SERONO PEPPER RANCH (THIS IS THE KICKER!)
